These potatoes are crisp, soft, and lightly flavored – a perfect compliment to so many entrees! AND they’re oh-so-easy to make! Plus, potatoes are almost always inexpensive at the grocery store!
I served these scrumptious potatoes with a big salad that consisted of field greens, carrots, tomatoes, chicken breast, and monterey jack cheese.
Ingredients:
- 2 pounds red potatoes, cut into halves or quarters
- a little under 1/4 cup olive oil
- 1-2 garlic cloves, chopped
- salt and pepper, to taste
Directions:
- Preheat oven to 425 degrees.
- Place potatoes, olive oil, garlic, and salt & pepper into greased 9 X 13 baking pan.
- Bake 40-45 minutes, stirring occasionally and gently until the potatoes are cooked and lightly browned.
Serves 4.
