These potatoes are crisp, soft, and lightly flavored - a perfect compliment to so many entrees! AND they're oh-so-easy to make! Plus, potatoes are almost always inexpensive at the grocery store!
I served these scrumptious potatoes with a big salad that consisted of field greens, carrots, tomatoes, chicken breast, and monterey jack cheese.
Ingredients:
- 2 pounds red potatoes, cut into halves or quarters
- a little under 1/4 cup olive oil
- 1-2 garlic cloves, chopped
- salt and pepper, to taste
Directions:
- Preheat oven to 425 degrees.
- Place potatoes, olive oil, garlic, and salt & pepper into greased 9 X 13 baking pan.
- Bake 40-45 minutes, stirring occasionally and gently until the potatoes are cooked and lightly browned.
Serves 4.

Roast some frozen green beans with olive oil, crushed garlic and s & p for 20 min. or so, stirring once. Yummy-yum-yum.
These look scrumptious! I love potatoes and am so happy that Thanksgiving is this week. One of my very favorite side dishes is lovingly called "Grammy Jean Green Beans." My Grammy Jean made the best green bean casserole with beans (of course) bacon, vinegar and pepper...something like that. It was tasty.
Mmm, that's my favorite way to make potatoes! (I add about a tablespoon of Herbes de Provence too. It smells soooo good.)

To make it even easier, I usually use a bag of shredded cabbage or coleslaw mix. It's a very simple way to add some vegetables to a meal. And the potatoes sound delicious!

I do my potatoes in a similar way, and love them. They are so easy and yummy!
I know it's more expensive, but a little "finishing salt" is way better than traditional table. It's absolutely worth going to a gourmet shop to get a super nice salt for dishes like this.
One of my favorite sides is Dill Carrots.
You take a bag of baby carrots, spread them evenly on a baking pan. Drizzle them with olive oil, then sprinkle with dill...I'm pretty generous in this department. Then kosher salt and fresh cracked pepper. Bake for 20-25 mins.
My little 15 month old LOVES these carrots. They still have some crunch...but oh, yum!!
Oooh, this one looks good and I'll definitely be trying it. One of my favorite side dishes is mashed potatoes, which are easy even when you get creative with the ingredients and add-ins. Yay that Thanksgiving is coming and so are the mashed 'taters!
I make this but I use a couple of tablespoons of vinegar (white balsamic is my fav) and a couple of tablespoons of olive oil with garlic...vinegar just adds a little zip to them.
I've also recently rediscovered my love of baked potatoes...hadn't had one in ages but they taste so good.
