Breakfast for Dinner

belgian waffle with blueberries and bananasEvery once in awhile it’s fun to “change things up” a bit and make breakfast for dinner. 

Scrambled eggs, blueberry pancakes, belgian waffles with strawberries and whipped cream, fresh honeydew melon, etc.

Breakfast foods are filling, easy to whip up, and somehow very fun to eat. So, why not eat a little bit of a.m. food at 5:30 p.m.?

I’m usually not a “boxed” kind of girl, but I have to admit that I really love the Krusteaz brand. They have two super yummy mixes that we use often: Belgian Waffle Mix and Blueberry Pancake Mix.

I’d like to start making homemade pancakes and waffles, but I haven’t yet found the perfect recipe. Maybe today will be “my day.” Will you share yours? I’m especially interested in recipes that are whole-wheat, healthy, and/or light & golden (but don’t hesitate to share yours if it’s super sweet, yet positively palatable).

    I swear, I want to meet the genius who put that thingie on the bottom of the batter bowl! Why didn’t that happen before I splattered a whole cake mix all over my kitchen ‘cuz it slipped off the counter? Yeesh.
    Anyway, I’m excited about this one. Very cool set of breakfast (or dinner!) goodies.

    I really don’t have a favorite pancake or waffle recipe since I don’t really cook breakfast these days nor do other members in my family. However, if I was lucky enough to win these products I would probably cook breakfast a lot more especially waffles with sugar on them. My brother and I love waffles with sugar on them.     hese would be fun and useful to own and would like to own them. They look quality made so thats a plus,. Heres a pancake recipe you might like. It will have kind of a gingerbread taste so hope thats one of the flavors you like.
    1 C flour
    1 1/2 tsp. baking powder
    1/2 tsp. cinnamon
    1/2 tsp. ginger
    dash cloves

    2/3 C skim milk
    3 T molasses
    1 T vegetable oil
    1 egg, lightly beaten

    Stir until the batter is smooth.

    Breakfast for dinner – my favorite! We have blueberry bushes and peach trees, so of course I love either one of them in my waffles. My kids both like chocolate chips in theirs.

    I’m a lazy cook, especially since I am only cooking for myself. I usually go with Aunt Jemima pancake mix and make the thin crispy waffles with fresh strawberries and whipped cream. Not too healthy, but very tasty.

    Oatmeal Pancakes

    2 C. buttermilk
    1 1/2 C. oatmeal
    1 1/2 C. flour
    1 tsp. soda
    1 tsp. salt
    1 tsp. sugar
    2 eggs, beaten

    Stir together buttermilk and oatmeal. Add flour, soda, salt, sugar and eggs. Cook as ordinary pancakes. Good with applesauce or syrup and butter.

    This is what we use

    1 1/2 cups all-purpose flour
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1 tablespoon white sugar
    1 1/4 cups milk
    1 egg
    3 tablespoons butter, melted

    In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

    Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

    When my grandsons make the 1200 mile trip to visit the first thing they ask for is my french toast. My one grandson has a record of 10 pieces. I use cinnamon and sugar in my batter mix along with a pinch of ground nutmeg and cloves. Thank you for the chance to be a winner.

    My favorite OXO product is a little brush that has a small container of soap attached so you can just squirt soap directly onto what you are cleaning. I wish I new what this product was called.

    I love putting happy faces in chocolate chips on pancakes for my kids. My husband doesn’t mind, either!

    I’m a big fan of the OXO products. And, like others, my husband likes to make the pancakes in the house. I make everything else. My favorite breakfast is NOT pancakes, though. It’s eggs cooked in bacon grease with a TON of different veggies cooked inside on a slice of garlic country bread.

    We make Swedish pancakes on Sunday, Mix in blender 4 eggs, 2 cups milk, 1 cup flour, 1 pinch baking powder, 1 tablespoon sugar and 1/2 tablespoon salt. Blend about 30 seconds on high. Add 1 stick of melted butter and cook on medium high heat griddle.

    My favorite pancake recipe is very simple.
    2 cups flour
    1 tsp salt
    2 tsps baking powder
    2 Tbls sugar (optional)
    2 eggs
    2 cups milk
    2 Tbls vegetable oil
    Mix dry ingredients. Beat eggs, add milk and oil. Combine with dry ingredients. Ladle onto a hot griddle or skillet. You know the rest…

    I love OXO products. My kitchen drawers are full of them. I especially like the OXO garlic press and the can opener. I have fibromyalgia, and sometimes my fingers and hands are stiff and painful, so using OXO products is easier for me.

    Crepes
    2 c. flour (Try NOT to use enriched flour which is unhealthy)
    3 c. 1% milk
    3 T. butter
    Blend flour, milk and add beaten eggs, then melted butter. Let batter sit for 30 minutes at room temperature. Put 1 t. butter in teflon pan and melt. Add scant amount of batter, till pan to coat bottom, cook and turn once. Remove and stack and continue with making rest.
    These are light and tasty. Fill with jam or apple butter or use for dinner.

    I just love these OXO products. They are extremely innovative. A pure joy with my arthritis. Here is a receipe I just love – it’s for Banana pancakes with berries. I found the receipe on a site called Allreceipes. Here it is:
    INGREDIENTS
    2 cups sliced fresh strawberries
    1/2 cup sugar
    3 teaspoons vanilla extract
    PANCAKES:
    1 cup all-purpose flour
    1 tablespoon sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 egg
    1 cup buttermilk
    2 tablespoons vegetable oil
    1 teaspoon vanilla extract
    2 medium ripe bananas, cut into 1/4-inch slices

    In a bowl, combine the strawberries, sugar and vanilla. Cover and refrigerate for 8 hours or overnight.
    For pancakes, combine the flour, sugar, baking powder, baking soda and salt in a bowl. Combine the egg, buttermilk, oil and vanilla; stir into dry ingredients just until moistened.
    Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle; place 5-6 banana slices on each pancake. Turn when bubbles form on top; cook until second side is golden brown. Serve with strawberries and whipped cream if you desire.

    Our favorite pancakes are Blueberry made with whole wheat. I love my OXO kitchen products they easy to use and they have a great fit in your hand. Plus they are dishwasher safe.
    1 1/4 cups whole wheat flour
    2 teaspoons baking powder
    1 egg
    1 cup milk, plus more if necessary
    1/2 teaspoon salt
    1 tablespoon artificial sweetener
    1/2 cup blueberries

    I make a baked pancake – bake at 350 for 30 min. Pour 2 Tbs melted butter into a pie plate, layer 2 sliced apples and 1/2 cup cranberries. Drizzle with 2 Tbs maple syrup and sprinkle of cinnamon. Pour pancake batter on top and bake. Yumm!

    I find that it is a waste to buy anything but oxo tools. They either break too soon or feel uncomfortable to use or just plain dont work. I had to wait for over a year to get a garlic press as the local stores were sold out every time I went. Finally I picked a good day and they had restocked the oxo garlic presses and I can now happily spice up my food.

    You asked for a waffle recipe. What is a recipe? I only use what comes in a box, and for waffles, Krusteez is the best! Belgian waffles with warm blueberry pie filling – from a can, of course. The kids love it when I top it off with whipped cream!

    We use my grandmother’s waffle recipe:
    1 C milk
    1/2 C vegetable oil
    2 tsp. baking powder
    1 1/2 C flour
    2 eggs
    dash salt
    Separate eggs. Beat whites until stiff. Next beat yolks. Add milk to yolks. Add Flour and salt to yolk mixture. Once mixed, add oil. Last, fold in stiffly beaten egg whites and baking powder.

    I love that these are from our family and we make them whenever we can!

    Here’s the waffle recipe I use (which I found at http://www.allrecipes.com). These are very light and freeze wonderfully!

    INGREDIENTS
    * 2 eggs, beaten
    * 1 3/4 cups skim milk
    * 1/4 cup canola oil
    * 1/4 cup unsweetened applesauce
    * 1 teaspoon vanilla extract
    * 1 cup whole wheat pastry flour
    * 1/2 cup flax seed meal
    * 1/4 cup wheat germ
    * 1/4 cup all-purpose flour
    * 4 teaspoons baking powder
    * 1 tablespoon sugar
    * 1/4 teaspoon salt

    DIRECTIONS

    1. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
    2. Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

    I have a few OXO brand items in my kitchen and LOVE them. They last forever and are still in great shape (especially compared to my normal Wal-Mart Stuff). I love to do a quiche at dinner (I guess that is kinda normal dinner stuff instead of breakfast). I normally love breakfast for dinner (those waffles look wonderful) but ever since I had Lily (who just turned 1) I am still getting back to eggs. For awhile after having her eggs turned my nose.

    Challah bread makes the best frech toast – its thick, but not too heavy, and just a little sweet to really bring out some great flavors. I reccommend everyoneuse challah the next time they are making french toast – you’ll love it!

    The best waffle recipe I have found is from Ina Garden, barefoot contessa. So basically it is not light in the healthy way but it is light in crispy golden deliciousness. I was skeptical putting melted butter in the batter but WHOA! it tasted like you put butter on the top, only it is perfectly placed inside very bite!! DELISH!! Now they sell the Ina mix at crate and barrel!! EVEN BETTER!!

    When we lived down South we freqented the Waffle House and the kids ALWAYS raved about their waffles. We moved to PA and everyone (even me) missed those sweet waffles. I googled Waffle House waffle recipe and I actually found a “cheat” site that had all sorts of restaurant recipes, KFC, Chili’s and Waffle House. Now whenever we have time to make a BIG breakfast we pull out the recipe and the waffle iron and everyone is happy!

    Can’t miss with Krusteaz’s mixes, but the following makes a yummy crepe-like Zucchini Pancake too:

    2 cups finely shredded fresh Zucchini
    4 large eggs, beaten
    3/4 cup all-purpose flour
    1/2 teasp. granulated sugar
    1/2 teasp. salt
    3 Tblsps. vegetable oil
    4 teasps. baking powder

    Beat eggs; add shredded zucchini; mix well with fork.
    Add flour, sugar, salt, and oil–stir well to blend.
    Finally, add baking powder and mix. (Should look like the consistency of heavy whipping cream.)

    Spoon about 2 Tblsps. batter onto hot griddle and cook until bubbles on top of pancake almost stop. Flip to cook other side.

    Rub finished pancakes with butter. Serve with choice of jams or syrups.

    ENJOY!

    My super awesome husband makes his own special waffles from scratch. They are whole wheat and also have flax seed in them so they are supposed to be healthier. I must say…they are really REALLY yummy and even yummier because he makes them for me :-) (he is a WAY better cook than I am!).

    I wish I’d started out with everything OXO! I have a few pieces now, and they are my absolute favorite cooking utensils. My next big breakfast project is going to be aebelskiver, Danish filled pancake puffs. I’ve already bought the special pan and I’m just trying to work up my confidence.     My favorite type of pancakes is made with a can of corn. After you pour the batter in the pan, sprinkle them with kernels of corn instead of blueberries. When I was little my dad would make these for me (my mom wouldn’t eat them because she didn’t like corn.)

    Mmm, I love breakfast for dinner! It’s quick, healthier than takeout, and nice to change things up every so often. I sometimes make breakfast burritos for dinner: a little bit of lean sausage, some eggs, a little bit of cheese, and hashbrowns or potatoes of some sort with seasoning, all wrapped up in a tortilla. Yum!

    Also, I love Oxo products. When we registered for our wedding we got some, but I don’t have any of the ones you showed off. I’d love to add them to my collection! :)

He likes regular mix but I loved this buckwheat mix I got a while back. It’s gone now and we replaced it with some type of whole grain mix. Hope it’s good!

    When I was growing up, my best friend’s family frequently had waffles for supper! I always loved it! And, they offered lots of different toppings. My fave was cherry pie filling and whipped cream. Yum! :)

    My children and I started enjoying “upside-down night” when they went through a particularly “picky eating” phase. It was a fun way for them to get all their vitamins, fruits, etc.! Happy Face Pancakes were always a favorite! :-)

    ok.. i had a horrible bridal shower and i never got the things i wanted!! people were just getting things that weren’t on my registry! uffff! i would love to have these! here is my banana recipe!

    Ingredient List:

    2 cups flour white or wheat
    4 teaspoons baking powder
    2 Tablespoons sugar
    1 3/4 cup milk
    2 eggs
    2 Tablespoons melted butter
    1 cup mashed banana (about 3 medium bananas)

    Kitchen Equipment Needed

    2 Medium mixing bowls
    griddle or frying pan

    Instructions:

    Preheat griddle or frying pan.

    In a medium mixing bowl, sift flour, baking powder, salt, and sugar together.
    In a separate bowl, blend milk and eggs together. Add the melted butter.

    Make a well in the center of the dry ingredients and pour the wet ingredients into the dry ingredients. Stir gently.

    Fold in the mashed bananas just before frying.

    Fry the banana pancakes on a hot griddle, until golden brown.
    And there you go!! ENJOY!

    Makes 4 servings

    I love breakfast for dinner. I make some weird waffles sometimes but they are good. I will cook up some bacon or ground pork sausage and maybe some herbs like sage, rosemary, thyme and mix it in the waffle batter. It makes for some good savory waffles. If you get crazy you can put syrup on it but I just use butter. YUM

    I love making and eating breakfast for dinner! Especially waffles. Homemade waffles and even pancakes seem like a lot of trouble to go through in the morning when you’re trying to get ready to be somewhere by a certain time. But at dinner time — no problem!

    We rarely eat breakfast for dinner, well unless you count eggs (we eat a lot of eggs at our house!) My son loves to eat pancakes with strawberry yogurt on top of them. I love to get the Kashi Go Lean ones – pop them in the toaster, YUM!

    This is for an oven baked pancake called a Krupsu

    1 qt. milk
    8 eggs
    4 tbsp. sugar
    1 c. flour
    1/4 lb. butter

    Beat together; milk, eggs, sugar, and flour. Melt butter in 13 x 9 inch baking dish. Pour egg mixture into pan. Bake at 450 degrees for 20-30 minutes, until puffed up and light golden brown. Serve with bacon or sausage. Serves 8-10.

    You can add canned pie filling on the top.

    I make a really simple Swedish pancake, its so light and delicious!

    3/4 cup all-purpose flour 1 1/2 cups milk 3 eggs 3 tbsp butter, melted, divided 2 tsp sugar 1/8 tsp salt
    Mix the ingredients together, Brush a small skillet with some more butter. Pour 2-3 tbsp batter into the hot pan. Tilt the pan so the batter evenly covers the entire surface in a thin layer. Cook 2-3 min. or until the underside is golden. Flip and continue cooking on the other side….Serve with fresh berries

    Do you know that breakfast for dinner is my FAVORITE thing to do? I could totally do an egg white omelette with spinach and feta for dinner any night!!!!!! Hmmmm….recipes….I do have one but it uses whipped cream and it’s totally wrong….I’ll have to find it for you and email you!!!

    I have no favorite recipe for either Waffles or Pancakes simply because I never measure my ingredients. I just mix self rising flour, milk, an egg and cinnamon to the right constancy. I do like to add diced apples, fresh blueberries or chocolate chips to my mix sometimes though. I love OXO items, I had the mixing bowl until my daughter in law pleaded with me for it (she called it my magic bowl..lol) so I gave in and gave it to her. I still havnt replaced it so would love to win this contest for myself.

    I was given a belgian waffle maker for a house-warming gift recently, so I’ve been on the hunt for a great belgian waffle recipe. I haven’t found one that I love so far, but I’ll keep looking. I’m a big fan of OXO products. I’m wishing we’d had that Mango Splitter when we lived in Texas.

    I love Banana Pancakes.

    Preparation Time: 10 minutes
    Cooking Time: 15 minutes

    Ingredient List:

    2 cups flour
    4 teaspoons baking powder
    1/2 teaspoon salt
    2 Tablespoons sugar
    1 3/4 cup milk
    2 eggs, beaten
    2 Tablespoons melted butter
    1 cup mashed banana (about 3 medium bananas)

    After growing dissatisifed with my cheap, $1 can opener AND being frustrated with my sometimes-works-sometimes-doesn’t-work electric can opener, I finally caved and bought a nice Oxo can opener. BOy, what a difference! Easy to grip, attractive, and quick. Love Oxo!

    I love making breakfast for dinner even though my husband isn’t a big fan. It’s a great price too. My favorite recipe is for whole wheat “blender” pancakes (you make it in the blender obviously). I’ve tried it with different kids of wheat and it all seems to work.

    Whole Wheat Blender Pancakes

    1 cup golden whole wheat
    1 1/2 cups milk
    1/2 cup vegetable oil
    1 egg
    3 teaspoons baking powder
    2 tablespoons sugar
    1 teaspoon salt

    Blend 1 cup of milk with wheat for 2-3 minutes add rest of milk and blend for another 2-3 minutes. Add the rest of the ingredients and blend. Cook on a hot skillet until done.

    I make a German Pancake that ends up at the supper table more than the breakfast table. It’s nice and hearty, almost like a cake, instead of the kind that puffs then deflates.

    I’m a bisquick pancake maker. One thing my cousin does which is a great idea is slice cored apples, and dip the rings into the pancake batter and then place them onto the griddle. Pancakes with the added flavor of apple! Yum!!

    I like banana pancakes with berries. so yummy! Good to start the day off!
    it’s
    * 2 cups sliced fresh strawberries
    * 1/2 cup sugar
    * 3 teaspoons vanilla extract
    * PANCAKES:
    * 1 cup all-purpose flour
    * 1 tablespoon sugar
    * 1 teaspoon baking powder
    * 1/2 teaspoon baking soda
    * 1/2 teaspoon salt
    * 1 egg
    * 1 cup buttermilk
    * 2 tablespoons vegetable oil
    * 1 teaspoon vanilla extract
    * 2 medium ripe bananas, cut into 1/4-inch slices
    * Whipped cream

    1. In a bowl, combine the strawberries, sugar and vanilla. Cover and refrigerate for 8 hours or overnight.
    2. For pancakes, combine the flour, sugar, baking powder, baking soda and salt in a bowl. Combine the egg, buttermilk, oil and vanilla; stir into dry ingredients just until moistened.
    3. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle; place 5-6 banana slices on each pancake. Turn when bubbles form on top; cook until second side is golden brown. Serve with strawberries and whipped cream if desired.

    I love pancakes/waffles, especially at night! Since my pancakes are never round, my waffles lack thickness. This would definitely be helpful, considering my and my sister love cooking! But I do like OXO products, making life so much easier!

    cups flour 2 tbs baking powder 1/2 cup sugar 1/2 cup of milk and one egg and 1/4 cup oil mix together . should not be completely smooth. cook in fry pan with little oil. cook on one side until tiny bubbles form. turn over and cook 2 minutes. eat with favorite syrup and butter. i like butter and sugar on mine

    I have tried so many recipes for pancakes….homemade, buttermilk, Bisquick, frozen, and have found that the absolute best, fluffiest pancakes are the ones I make from the Original Aunt Jemima Pancake mix.

    I use whole milk, an egg, the mix, and vegetable oil. I let the batter rest for 5 minutes minimum before making the pancakes. My husband then butters each pancake lightly with whipped butter, stacks the next on top and repeats the buttering, then pours syrup over all. DELICIOUS!!!!

    We LOVE breakfast for dinner!!! It is always a big hit with the kids too. I haven’t ever made it to the home-made ones, although you are inspiring me. We’ve always stuck to Bisquick (for pancakes, waffles too, with a belgian waffle maker). We usually load the pancakes up with blueberries on the inside. So yummy! I think they have some healthier versions out now too. Another non-homemade version, but have enjoyed some of the mixes from Stonewall Kitchen (the company owned by “Barefoot Contessa” and while pricey and only sold at certain places, she tends to use very healthy, real, whole ingredients.) As for OXO — never have tried a product from them that I hasn’t been a hit for us!!

    We (especially our 2 yo) LOVE the super healthy “pancake” recipe from the South Beach Diet book.

    It is: 2 eggs, 1/2 c oatmeal, 1/4 c cottage cheese, 1t vanilla, 1/4t each cinnamon and nutmeg. Blend and cook like normal pancake batter.

    This in an individual serving size recipe….and I am amazed when our son will almost eat a whole serving, that is a lot of really filling food for such a little guy. We top them with pure maple syrup, or sometimes fruit and yogurt…..mmm, I want breakfast for dinner tonight!!

    Our favorite breakfast for dinner treat is french toast from the Better Homes and Gardens cookbook. All of us love it with a home made peach syrup! Yum! I think that’s what we’ll have tonight for supper. I also use Krustez for waffle making. We eat a ton of breakfast foods here because those are things that the girls eat well.
