The Outdoor Family: Weber Q Portable Gas Grill by Lowe’s

October 4, 2010 By Stephanie

The Outdoor Family: Weber Q Portable Gas Grill by Lowe's 1With our house on the market and our heads in planning mode for our upcoming giving tour ’round the country, meal planning has been the last thing on our minds.

I took the girls to the grocery store yesterday and couldn’t think of a single meal to make (really). I spent $20 – milk, butter, bread, and fruit. We had homemade fruit smoothies and fresh tortillas last night; french toast the night before. Tonight? Um. Something on the grill?

Tim is awesome when it’s 5:30 and we’re meal-less. He will often grill up chicken, fish, or veggies at the last minute – and the results are rarely disappointing. On special occasions, we grill up a platter of babyback ribs (and the girls love it).

The Outdoor Family: Weber Q Portable Gas Grill by Lowe's 2If you’re short on space (perhaps you live in a condo, apartment, or duplex) or you want a grill to take camping, I recommend the Weber Q 120 LP Gas Grill ($169; available at Lowe’s). It’s compact, heavy-duty, and a cinch to use. The fold out wings on either side are great for holding waiting plates and tongs.

We have never had anything nicer than the cheap round grills from stores like Wal-Mart. They rust so quickly and one even caught on fire. I’d love to put the gift card toward a nice one and host a few cook outs before it gets cold!

We eat out all the time. I mean *all* the time. The last meal I made at home was on Friday; I took a day off work and hubby was working so I fixed some canned soup. It expired about four months ago. I ate some of it anyway. It was okay, but the chicken seemed kind of dry, which is odd when it’s been soaking in broth for a least two years.

I guess the easiest meal I make at home, usually a couple of times during the cold months (we don’t have central heat) is lasagne. I brown the hamburger meat and drain. Mix the meat with canned (or jarred) spaghetti sauce. Mix shredded mozzarella with a canister of ricotta cheese. Lay down a layer of uncooked lasagne noodles, ladle over a layer of the meat sauce, spoon in some cheese mixer. Repeat. Add about a quarter cup of water (I use it to rinse out the sauce can (or jar) for a little extra flavor. Cover with aluminum foil that you have sprayed with some Pam to keep the cheese from sticking. Bake for about an hour at about 375 (or whatever the back of the noodle box says). Take off the foil and bake for another 15 minutes or so. Mmm-mmm. Overall, not a lot of prep time for a good home-cooked meal.

We don’t have our big old outdoor gas grill anymore, so that little Weber Grill looks like it would really fit the bill just for the two of us. Grilling has been a mainstay as our menus – and now our trusty old Weber is literally about to bite the dust (that is: to crumble into dust!) We love to grill meat, fish, seafood, chicken, turkey. and now especially veggies! They really taste great grilled. Hubby likes to grill pizza and bruschetta too. (I admit some “experiments” are more successful than others – but same goes with cooking inside.

We just sold our house and are builing a house right now and living in a tiny rental house. I need to go to lowes and get some metal shelves to put in the garage to help organize us. This looks like a great grill for us. It has started to be rainy here so i have been using the crockpot quite a bit making a turkey chili, an italian chicken dish and red beans and rice in it.

Tacos, i feel sometimes like we eat tacos more than twice a week. That can’t be right, can it? I haaaate cooking so tonight it’s Western Mac (basically hamburger helper minus the white glove and box); tomorrow night it’s Chicken Casserole; I can’t WAIT for the nights when the husband is home. He LOVES cooking and I happily hand over the spatula/spoon/fork/tongs, etc. He grills all year long. When it’s raining, snowing, freezing, the grill comes to the backdoor where he’s somewhat protected by the overhang. I’ve seen him rig all kinds of weather protection out there lol. His best/favorite? chicken breasts and hot wings. My 9yo daughter loves, loves, loves his hot wings. (too hot for me). He also makes cheeseburgers that would make any chain blush. – Jen (writtendesign at gmail dot com)

Cashew chicken is a big hit here, and we have it every other week or so. Hubby and the kids also like homemade pizza with a homemade Fast Rise Yeast crust (Florence-style) and we had that in the form of Spinach Pizza Margherite last week. Tonight we’ll have turkey enchildas with fluffed white rice and beans on the side. I like black beans, but refried beans won the vote, so that’ll be the side dish (which I’ll be starting shortly…is it really 5:30 already??).

I love to cook once and then eat many times. Here’s some ideas that should cover your meal needs for quite a while. These are very simple and quite good meals. This past week we had spaghetti and meat sauce and beefy nachos I cooked using the method below.

    1. Get an extra- large package of ground beef. Pull out half of it and cook it with onions, celery and bell pepper in a saute pan. Divide the cooked and drained mixture in proper size portions for your family’s meal. Refrigerate or freeze cooked meat mixture until needed. With this mixture, just thaw in refrigerator and add the appropriate sauce or seasonings, cook, and serve to make:

    – tacos
    -beef stroganoff
    -spaghetti and meat sauce
    -sloppy joes
    -taco salad
    – mac and cheese with ground beef
    -Spanish rice with meat
    -beefy nachos
    -pizza topped with ground beef
    -chili

    2. Get an extra large package of chicken. It can be breasts, thighs, meat, youbtake off the bone, etc. Cook it with chopped onions, bell peppers, and celery. As with the beef, portion it into meal size packages for your family. Add the proper seasoning or sauce and you can have these meals in a snap:

    – chicken spaghetti
    -King Ranch chicken
    -chicken enchiladas, burritos
    – warm chicken salad
    -pizza topped with chicken
    -salad topped with warm chicken
    -chicken and macaroni
    -chicken nachos
    – chicken with rice
    -chicken chili

and also – Place the appropriate number of chicken pieces for your family in a plastic or glass container. Top each container with a different sauce or marinade. One can be BBQ, another Teriyaki, another Italian, etc. Label and date and freeze the containers. Thaw containers in refrigerator and cook a container when you need one. Easy, healthy flavored chicken awaits your family. There are so many different sauces and marinades to try that you’ll never be bored.

I have done this method for years and love it. Enjoy and good luck!

The weather is starting to turn so I made a Coke Roast in the crockpot (can of Coke, Mushroom soup, dry onion soup mix, meat, potatoes, and carrots.) The next night I shredded the left over meat, added a drained can of peas, drained can of corn, and a little water and turned it into stew.

Another night I made Chili. The next night I turned the chili into a Tater Tot Chili casserole whose recipe I got from Taste of Home.

I also love to make homemade pizza. I make the dough in my bread machine. The recipe I use is on Hillybilly Housewife’s website.

I adapt most dishes to fit kids, as in, taking the hot spiciness away and making them family friendly. I just won a recipe contest for my Gnocchi and I love our style of Zuppa Toscana. I can link you to my recipes if you like Italian, but I don’t want to spam your blog with my site.

When it comes to cooking with less space I’m an expert! Our fave family meal is Chicken Packets. You can do this on a grill or in an oven.

You just take one serving of chicken for each packet and add what you like. We like one potatoe cut up (so it cooks well) with olive oil drizzled over. I prefer hot peppers and salsa, my daughter likes citrus (lemons or oranges) with her fave dry spices. My DH like a bit of both, so he has salsa with lemons.

Maybe I should learn to do it, but lighting the fire intimidates me and I have no idea on how to determine when anything is done.

There’s usually something on the list that is just a few ingredients which we usually have in the fridge, freezer, or pantry. We’ve actually been looking at this grill – need a new camp stove. It looks like a good one.

We have found a new favorite dinner – favorite because it is very tasty, but also SUPER fast and easy – Buffalo chicken dip. It is simply an 8 oz. cream cheese, 1/2 C ranch dressing, 1/2 C Franks Red Hot Sauce, 1/2 C shredded cheese, and one 12 oz. can of chicken. Mix it all up and bake at 350 for 20 minutes. Enjoy with your favorite corn chips. YUM!

Other good things we enjoy are chicken, green bell peppers, pineapple kabobs on the grill; cheesy broccoli soup; chicken cordon bleu http://www.southbeach-diet-plan.com/recipes/chicken_cordon_bleu.html; penne pasta chicken alfredo, chicken enchiladas; and my favs – breakfast foods like whole wheat waffles; tater tot, egg, cheese tortillas; and of course cereal!

For the last few months, my menu has been dictated by the garden! Whatever has ripened and needs to be eaten… I just have to get creative with what to do with it (a trade off for the time that I do NOT spend shopping for groceries). My latest ‘find’ was a Zucchini Pie recipe! A bit like Quiche, with ricotta cheese, parmesan cheese, eggs, and half and half! My daughter likes it enough to request we have it again! And, it works just as well with yellow squash. 20-30 min prep, and 60-70 min in the oven, and with a fresh tomato salad (also from the garden) reasonably healthy, fairly easy dinner. And, since there are just 2 of us, good leftovers for lunch…

Also we sometimes have smoothies and something else small for dinner around here too. They can be very filling!

But I love my grilling too, which we use all year, on the coldest days I still run out there to put some jack daniels bbq chicken or ribs on it to slowly grill along with a baked potatoe, simple yet fast grilled foods that stick to your ribs! thanks

Chopped lettuce, a box of farfalle noodles, Italian dressing to taste, chopped tomatoes and olives, parmesan and mozzarella cheese (shredded) and then grilled chicken with Italian seasoning on it, chopped up. Our current “go to” is soup! So far I’m loving it. A couple weeks ago I made a huge pot of yummy chili and that fed us for a few days….but we typically buy the soup in the cans or cartons made by the market. We are lazy chefs over here.

We have this exact same grill and we use it at least 3-4 nights per week! It is so great!! As far as meals go, I typically make things that are easy, inexpensive, delicious and don’t take more than 30 minutes (not counting bake time if necessary). I completely understand the debacle of not knowing what to make, or not being in the mood to make something. Lately we have been having a yummy spinach salad with hard boiled eggs, bacon and grilled chicken on top with a Dijon viniagrette. So yummy…and easy…and you can prepare the eggs and bacon ahead of time if you like: http://lettners.blogspot.com/2010/08/thursdays-recipe-rodeo.html

Tonight I am making pulled pork sandwiches: http://lettners.blogspot.com/2009/09/thursdays-recipe-rodeo_10.html with the BBQ sauce from my rib recipe: http://lettners.blogspot.com/2010/06/thursdays-recipe-rodeo_17.html. And with the leftovers we will make pulled pork pizza: http://lettners.blogspot.com/2010/07/thursdays-recipe-rodeo_29.html

One of our default ‘don’t have anything planned yet at 5:30pm’ meals is a grilled chicken sandwich. Grill up some chicken, put it on some ciabatta bread/roll with some of the yogurt sauce (the same one we use on our lamb burgers) and some fresh spinach leaves. Delish!

I hope it cools down for you soon!

LOL! At first I thought you were giving away the Weber Q grill, which after much research and trial-and-error, we selected as our new camping grill. We love it! Like you said, it is heavy duty, compact, and doesn’t take a lot to get set up.

I’ve been in a cooking funk lately, something that usually comes around the shift of seasons. I’m ready for stews, soups, and chilis, but the weather is not cooperating! So yesterday, I cut up two whole chickens, threw the bones in a pot and made up some stock to freeze for soup when the weather complies, and threw the breasts on the grill for dinner. The thighs and legs went into the freezer for another meal later. And that’s about as creative as I’ve been lately.

And have you ever roasted beets? They’re scrumptious! I never liked beets when I was a kid because I only had them from a can. Fresh beets are so good! I’ve been peeling them but I think next time I’ll leave the peels in place. Just slice 1/4″, brush or drizzle with olive oil, sprinkle with garlic salt, and roast in the oven at 375 or so. I recommend using a glass baking dish for easy clean up.

The daily drudgery of dinner planning! Some of my quick and easy favorites include tuna melts (I buy the tuna already made at the deli counter) and soup (Progresso chicken noodle). Sometimes I mix this up and make tuna wraps with tortillas. Spaghetti with meatballs (I buy ready-made at Trader Joe’s if I don’t have homemade ones in the freezer). I keep homemade spaghetti sauce in the freezer so it’s ready in a few minutes. Hot dogs wrapped with Pillsbury croissants and baked for 12 minutes are very popular with my girls. Trader Joe’s has a great selection of frozen fish that I throw on the grill (marinated Turbot is a house favorite) and makes for a quick-prep dinner.
